A lot of African American food was built upon surviving and finding what they could to fill their stomachs on a meager budget. While we aren't rich as a collective we are not as poor as our grandparents and great grandparents were, so we don't have to resort to the lengths they did.

It's crazy when you really think how racist whites tried to gives us scraps & the parts of animals they didn't want to survive on. But we persevered & made miracles out of it
