Many people are going gluten and dairy-free. Even if you are not allergic to gluten and dairy, these things do cause un-needed inflammation so not eating them too much is better for everyone.

The question is, if you are not allergic to a food, but stop eating it anyway for a long period of time, will you become newly allergic to it?

I don't think so, but I can only speak from my personal experience. I became a pescetarian (no meat, only fish) for 2 years. I lost like 15 pounds, and I'm already a slim nikka, so I added meat back in my diet for 6 months. It was a seamless transition, I did not experience any allergic or adverse reactions, however, I couldn't bring myself to continue eating meat. I went back to being a pescetarian again. All I need is fish, fruits, and veggies:blessed:
