Not sure about that because those old white dudes in the south cook like that too. And in Texas those white boys always show off briskets that fall apart at the touch.

This is an entirely different situation/convo/etc than something like a steak.

yea... alot of ppl and peckerwoods think ribs suppose to fall off the bone... it suppose to have a bite to it...

then them honkeys serve bbq with onions and pickles n shyt ...
ive posted about how they smocce bologna up here :scust: it has a certain ccinda smell to it too. i understand frying it to macce it taste licce something (ccind of licce spam), but smocced bologna is disgusting. its licce... gooey inside :scust:

It's room for certain food to be cooked certain ways for certain people. I like my wings "overcooked" if these ribs are overcooked then I that's how I want my ribs :manny:

i loocced that up. thats basically rare steacc slightly burnt on the outside. youd prolly be all right eatin that at a good chop house but i wouldnt trust that with no grocery store steacc :picard:

im a medium rare guy myself. some blood (am i allowed to say that word in a zay thread?) is occay but the blood should be hot

As someone who has been smoking meats religiously since getting a smoker 5 years ago there is such thing as cooked too long. I’ve done anywhere from 8-18hrs smokes, and can tell you there is such thing as cooked too long. I prefer my bbq to have some what of a bite rather than just meat mush, which can happen with some longer cooks and tbh it usually looks like what ol boy is cooking up. I don’t know his process or what it taste like so I can’t judge. But usually when the meat come off the bone like that it’s passed my preference. Ima eat it forsure, but yeah just my two cents.
