If you brine any meat it'll taste like 'chicken' because generally all chicken is brined and mass produced so it doesnt really have a natural taste.
if youve ever hunted or lived on a farm and natural animals, you'd know the gamey, musky taste or flavor that different animals have. and thats based on a lot of different variables i.e animal diet, but for the most part to get rid of that taste you brine i.e soak in salt water/ or sugar/ vinegar/ whatever the recipe is (everyones is different but at the end of the day it strips the natural flavoring of the meat) and then add your own seasonings and sauces.
whats crazy to me is rabbit to me has a weird flavor that i dont like on its own (the meat dries out fast so typically people cook rabbit with bacon) but I do like squirrel, most people dont like squirrel and do like bacon.but i could brine them both and serve you a leg and you'd be eatin like a mug
