Theres a spot in the Phenix City/ Columbus area called Hartz Chicken with hands down the best peach cobbler ive had in my life. On my trips from Alabama to Atlanta i would always stop and get a thing of peach cobbler only. Now that i live in the Atl area ive been tryna find a spot with great peach cobbler. Any suggestions?

QuintessentialBM's Home-Made Peach Cobbler Recipe

Pie Crust Ingredients:
Flour
Sugar
Salt
1-2 sticks of Chilled Unsalted Butter depending amount of pie crust needed(easy enough to cut/shred but not frozen)
Ice Cold Water
Egg White/Nutmeg/Cinnamon(optional)

1)Add flour, lt sugar, lt salt and finely cut(shredded even better) into large mixing bowl. Work the dry ingredients together with your hands until they're thoroughly mixed.

2)Slowly add ice cold water into mixing bowl while mixing the dry ingredients together. Add small amounts of flour while mixing t to prevent the paste from sticking to the bottom of the bowl. Paste should be worked until it's semi-dry and begins to form a "dough-like" consistency.

3)Kneading the dough. You need to flour the surface wherever you are working and knead the dough for about 7-10 mins, constantly adding small amounts of flour to prevent sticking to the surface that you're working on.

4)Cover dough(foil, seran wrap or a towel)in a bowl lined with flour and refrigerate for 20-30 min.

5)Remove from fridge. Line your surface area with flour, then begin stretching the dough by literally pounding it with your knuckles until the dough cannot stretch any further.

6)Use a rolling pin to flatten the dough to it's maximum without tearing.

7)Using a dough(pizza)cutter or knife, cut the dough into long, rectangular pieces(or pieces that will fit the pan that you're cooking in)

8)(Optional) Mix some egg white with cinnamon, sugar and nutmeg, then take a culinary brush and spread the mixture onto the pie crusts. Egg white will make the crust turn brown and give the crust flavor.

Filling Ingredients:

Peaches(canned)(or any fruit at this point)
Corn Syrup(unless the peaches come canned in heavy syrup)
Cinnamon
Sugar
Nutmeg

Other than the corn syrup, which you should add about 1/2 of the amount of fruit, add nutmeg, cinnamon & sugar to taste. Put all of these ingredients into a bowl and mix them together with a large spoon.

Line the pie crust in the pan that you're cooking in, pour the filling in, then cover and seal with the rest of the pie crust.

Pre-heat & cook @ 375 degrees for about 1:30(or until you smell the pie and you can tell that it's done. :noah:

This is a basic recipe with a few culinary tricks. Anyone can do it.
