Basically, I think I want to get a GoPro to record some hikes and bike rides. Maybe some other things.

And I have to say, it's quite overwhelming to compare things on the GoPro website because so many of the cameras seem similar and I'm not sure what features are worth upgrading for.

What has been your experience with these cameras? Are there any settings or accessories that you recommend or feel are overrated?

Make sure you get some type of case for it so it doesn't get all scratched up.

Meh. Video stabilization is prolly most noticeable.

I haven't used one since the hero4 I think (idk what they on now) but if you're just going on hikes and riding your bike just about anyone will do. Quality for gopro aint REALLY that important to where you'll notice a difference.
Just get a waterproof case cause IMO the only thing that really makes them interesting is being able to put em in water
And a couple different type clips cause you might wanna attach em to your axel sometimes.

I went to Japan a couple weeks ago and I used my GoPro to record myself walking through the Shibuya Scramble (that giant crosswalk with the crazy amount of people). The GoPro is attached to my chest with a harness called a "Chesty".
