I have tried plenty of authentic food from all over the world and the ones that stand out to me are

Nigerian

Jamaican

Korean

Turkish

Mexican

In that order. Each of them have multiple amazing signature dishes unlike some countries that only does one thing really well

What's yours

Italy stood out. The produce and shrimp taste different from the US
Italy
Japan
Mexico
Morroco
Nigeria

These countries had some of the best food I have eaten.
I have tried minestrone, Risotto, Pizza, pasta, lasagne, ribollita and tortelli

They were all meh bar lasagne. They tasted fresh and organic though, I will give them that

My wife and I ate a lot of seafood. They had this seafood stew with shrimp, mussels, i believe it was a type of sea bass to but it was so delicious and fresh.

Also there was also this pasta with what was like a veggie and anchovy sauce that was really good as well.

But I was culture shocked to see the difference between Italian food and Italian American food.

I've been mostly going to Latin America and Asia. Pops might want to hit West Africa, so I'll try to make that happen.

But these past few years

Hong Kong - too many to name, but Typhoon Shelter Crab is one of the many things I've remade state side.

Salvador de Bahia, Brazil - Moqueca - I make this at least once a week.

Saigon, Vietnam - Bo La Lot

In Thailand my favorite was stuff from Isaan, so I'll need to revisit.

CDMX, Mexico

In Mexico City right now, and the best thing I've had was some chilaquiles from an old school restaurant. I only got through half of my list. Lot of street food, hole in the walls, and high end.

shyt, that's what's up. How are you able to travel so much, if you don't mind. Plus, you you seem to go to places that are nit commercialized.

Appreciate it.

Years of schooling, and saving. Try to take at least one international trip per year. With work from home, I might be able to do some low key/off the books nomading.

But most spots I've been to aren't hard mode. That said, no real interest in Russian or Middle Eastern food/culture.

Thailand. Amazing food at unbeatable prices. Plates that cost $1.50 over there would be selling for $15 here. Whole fish meals that would be market price, $100+ in America were so cheap there. Street food game is on lock.

And on top of the great cooked food , you have all the fresh fruits and smoothies. I was eating fresh dragon fruit and mango almost daily. Drinking fresh passionfruit and lychee sodas :ahh:
