I watch a lot of world food videos and I notice a common thing in much of the world is foods made out out of offal (off cuts of the animal). I respect that because it makes the most use of the animal and doesn't let it go to waste.

I'm not a picky eater by any means but I can't bring myself to eat tripe, intestines, liver, etc. I went to a Latin place the other day that I usually love, but they had a big tray of tripe chilling at the steamtable and the smell was not pleasant.

Pretty much every black culture I can think of besides African Americans eat tripe...West Indians and West Africans mostly from my experience.
In the south especially, African Americans eat forms of "offal" (never heard that word) too...chitterlings comes to mind
Pretty much every culture in the world eats off cuts animal in some fashion.

True. And I just learned that word a few months ago
I've had Tripe and Liver in the past. Fried tripe taste like calamari. :yeshrug: Liver seems weird, but if it came to it, I'll still eat it. Cant do Chiterlings.

Yeah I definitely draw the line at intestines.

That's the kinda stuff where you really need to have someone's grandma who knows what she's doing cook it for you, or else it's straight up. :scust:

Ordering it at restaurants, they probably do it okay, or else no customers would return, but it's still not going to be made with the same quality.

My local mexican place has menudo, but I'm not gonna try it. I've had their cabeza and lengua tacos tho. Pretty good :obama:

The menudo broth actually looks really good but that tripe just looks so visually unappealing with those stomach chambers. I also hear that it's super chewy which sounds kinda gross. I tried a cabeza taco once and it was good but I find that the regular beef is better. Suadero is a good choice too because it has a different taste/texture than regular carne asada, but doesn't have any off flavors.

I'll eat tripe, really only have it in menudo or pho. I'll make menudo occasionally, got to simmer the tripe long enough so it becomes tender.
Can't fukk with any of the other stuff. I buy a whole chicken I discard the liver, heart, and gibs. I will eat the neck and the feet tho (feet doesn't come with it).

I've had it in pho, it doesn't taste like anything. Unlike chitterlings where you're fully aware of what you're eating.
