HIV medications are way better than they were 20 years ago but I don't know if I can overcome the stigma and I would be surprised if the restaurant survives.

You can't get HIV from eating from a HIV positive chef. It's relatively hard for a straight man to get HIV actually. Even if a straight man had sex with a positive woman with no condom there's still only a 1 in 1000 chance of catching it for him.
