When you do the math, even if they gave waiters higher wage, the tips still add up to be more. They could pay workers $18/hr and it still wouldn't come close to tips.

In the right city and restaurant/bar/club, waiters can pull $60k +

That's not consistent and not everybody is getting that.

I knew some that had great nights okay night and meh nights. Also, it's not just waiters how are getting tips. A lot of other food service places now ask for tips after you order
