I plan on taking her to in door go kart .

Most museums in major cities on certain days open up at later hours for adults to visit the exhibits without kids running around. It usually also includes opportunities to get drinks and food.

In Chicago they have Adler after dark where the Planetarium is open at night for 21+ The cafe area has a DJ and serve cocktails. You can also purchase extra tickets to go into the main observatory building to see the major telescope. If not you can just sit on the balcony and look out to the Chicago skyline and look at the small telescopes.
