The best Mac n cheese, that soul food country Mac n cheese, is actually a lil bit dry.
In the Caribbean they make it that way also but they call it ‘macaroni pie’. Best mac n cheese I ever had was in st Lucia at this spot on the side of the beach.
Both types the constancy is more like ..

i just need to edit it. I grew up on the Caribbean style pie like the pic you posted, due to the west indian influence in Toronto.I plan to make a video for a few different versions of macaroni. Im gonna do one with bread crumbs also

Hers is a combo of the dry “pie” but with creaminess to it ah man I’m hungry now lol

Great recipe. Only problem is he wasnt supposed to dump all the milk in at once. You add a little at a time or else the butter/flour will clump up. Once I started making a rue for my Mac & Cheese, I never looked back.
