I roast them with the skin on then peel it after, sauté in a pan with chickpeas and sweet potato peppers onions, whatever seasoning u feel

I only have garlic, bell peppers, green and red onions.

Will it go good with some Brussels spouts and asparagus?

Peel them normally..
Cut them into chip sizes(or strips)
Pan sear them in EVOO(extra virgin olive oil)..
Sprinkle a little sugar(for a different experience) or salt/pepper..
Pair with a white wine..

Really good with pasta
