it's cause they need to work on their performance. structure, timing, body language and wording. and still have it look natural as fukk so it seems like you're just having a convo with the audience. if you're too focused on everything above and don't take the audience's energy into account, you'll bomb because you're not including them in the convo. and i don't mean necessarely to have them interract. just mean to take their reaction into account for your tone, timing, etc.
Eddie Murphy is the opposite example. dude has 2 classic standups. even classic comedy movies. but i rarely find him funny in interviews.
Kevin hart i think his standup is funny (don't like the material, but i like his performance) but off the cuffs he goes HARD.
