This whole time I thought of risotto as a main dish.

But alright.

It's certainly my favorite.

And no, it's not hard to make, just takes a lot of attention because you have to stir it the whole time.

Just two days ago, made a mushroom / artichoke risotto to go along with my pan-roasted duck breast with cherry balsamic sauce.

Yeah, I can throw down.

Dawg, I've been working in fine dining for years and my last spot was a 4 star/diamond Italian restaurant where I had to routinely make risotto. It doesn't take hours.

It can be made in less time yes

Risotto is an actually easy dish. Take ya aborio take ya white wine take some butter parmesan even mushrooms. Cream. Easy
