More along the lines where the people being hunted seem to be outmatched, but not too over the top where you know comfortably they'll easily pull it off like "The Losers" and "Mr. and Mrs. Smith" when it just becomes some boss sending out a ton of outmatched henchmen. I'm talking where the main character(s) might be skilled but the hunter(s) chasing them down seem like they're better/equal.

No Country for Old Men- best example.
Harley Davidson and the marlboro man- cheesy early 90's, but 5 highly armed villains hunting 5 regular people.
Go!- That Las Vegas scene was intense, is there a whole movie like this?
The Professional- only the ending really, but the plot wasn't about being chased.
Terminator 1 and 2
End of Days
Predator

The Weird Side
That Ice T movie, surviving the game where Gary Busy and his rich friends hunt ahomless man (ice T) in the mountains or some shyt...think the father from jumanji is also in it...

And in the same vein, Hard Target with JCVD...similier movie but they hunt JCVD in the city, and hes not homeless...

Also add just about any horror movie ever made.

First movie I thought of, such a bad good movie filled with crazy-ass performances from Busey and Rutger Hauer.

Road To Perdition. Tom Hanks is both hunter and prey in that one.
