He confirmed that the “parity clause” between S and X is flexible and the BG3 “delay” is just based on their own dev priorities and situation.

Yeah. Larians choices are also "flexible". Guess what choice they decided to flex and why tho.
Xbox has the lowest customer base, and the most competition for an RPG this holiday.
Makes all the sense in the world to get the PC and PS5 versions done first. It will have its own moment in the spotlight on xbox as well.
