Basically for baby backs, set the temp to 300 F. And smoke them indirect, unwrapped or 1 hour. Then wrap them in foil with what you want to get tender. I use honey, butter and brown sugar. Smoke them wrapped in foil for another hour. Then they should be probe tender.
Theres other ways that take longer, but im not tryna spend 4+ hours on no ribs. I been to so many cookouts where the ribs was either mushy or tough as hell
