Does anyone know if there is typically more interest and traffic on apps like OfferUp and LetGo when it comes time for the holiday season/end of the year?

“More” is subjective. You’d have to have a base number
but here is what you should do
download the apps
put the items you want to sell on them (and Facebook marketplace
)
If the traffic works for you then sell your items

Thanks, BTW my local market is NYC, and I did have things listed there prior like 3 years ago, but I couldn't really remember if there was any sort of holiday "bump".
