Some services allow you to download/local cache for offline play, but generally you do need an active persistent internet connection.

You download it to your phone within the app when under wifi. You select "download" or "make available offline". That's what I do because I don't use data on it.

Yes - the app has its own internal analytics that it uploads to its servers when it has a connection. I'm sure this has a limit but if you are offline for 4 hours everyday listening to music, the data will get uploaded when you are back online.

No - if you select songs/albums to be available offline you can play it anywhere. My Spotify app is 26.6gb big due to the amount of music I have saved on it.
