Maybe it's just me but I'm not a big fan of vegetables on a sandwich. A lot of times it takes away from the taste of the coldcut or in general doesn't do anything for me like lettuce. Maybe during the summer when there's a really good in season beef tomato otherwise in good with just coldcuts and then mustard or mayo or oil and vinegar depending on the sandwich

Frozen fish and packaged processed lunch meats? Hit up the seafood sections of a good market, just like you did with the deli stuff. Find a good butcher and the few bucks difference in price for meats is well worth it as well. Salmon/shrimp stay on sale here at the fresh seafood counters, usually cheaper than their frozen/pre packaged counterparts
