I hate the flack soul food gets now
First of all It was never something we ate every day or even every week for that matter Moms would cook it maybe 1 Sunday a month or for a holiday. All that negative talk is helping erase the cultural footprint black people have in this country. Another thing some version of chitlins is cooked in every part of the world. Muhfukkas gotta stop letting people shyt on something just because it's mainly associated with black people.

Almost all of the food that people call Southern cooking is Soul Food. Let Paula Deen make it and then all of a sudden those same nikkas won't see it as Soul Food.

Black people literally created Southern cooking and definitely improved upon the stuff that they didn't create. Stuff from gumbo, hoppin john, jambalaya, cobblers etc., where either dishes brought here by Black people or definitely improved upon by Black people. Stuff like bar-b-que while used in Spain, Mexico and Texas; was revolutionized in the hands of Black people in America. All of that stuff is Soul Food and if any Black person had a mother or grandmother that cooked regularly then they already know how good and healthy Soul Food really is.

White folks being told the slavery wasn't that bad and it want even slavery in some cases .

Black folks thinking they are everything but an African....

1 star thread. Nobody is eating chitterlings day in day out. Matter a fact the whole "soul food is unhealthy" argument is vastly overblown. Go ask someone like my ma who grew up on a farm until around middle school and she'll tell you most of their diet was vegetable based. People couldn't afford alot of extra meat short of what they raised.

More substantive problems are...
  • People not eating for their activity level
  • People eating pre-made high caloric / low vitamin foods like potato chips, soda, fast food, etc etc
  • People having to manage exorbited stresses from a "white supremacist" society
  • People not getting enough sun light (converts cholesterol into vitamin D)

As a matter a fact I'd put AA culinary tradition up against damn near anyone else in this country in terms of balance & variety.

  • Italian is a bunch of starch & cheese
  • "American"(hamburgers, hot dogs, fries, etc)... self explanitory
  • Mexican is a bit better on the starch & variety of vegetables but still meat heavy and variety of vegetables are nowhere near what AA use
  • Chinese starch & meat heavy ...good variety of vegetables though
I could go on and on. Greek & japanese food is cool. Indian is ok also, but remember when we(I) talk about soul food we(I) are talking about the totality of the AA culinary canon
  • BBQ
  • Creole
  • Basic(collards, black eyed peas, sweet potatoes, fish, pork, pecans, peanuts, peaches & plumes etc etc )
  • Health(the whole eat to live paradigm that came out of NOI and other vegetarian based traditions that poped up in the 60-70s)
  • etc

As a matter a fact our culinary cannon is as varied as our musical cannon. No other ethnic group in america has the shear variety of foods on offer. Closest maybe the Chinese.

Nope, they were given the animal parts cacs hated etc..and being we creative, figured something out and made great food.

Cacs didn't hate those animal parts. Cacs eat those animal parts to this very day. The chitlings that were given to African Americans are a delicacy to the French. The French make them into a sausage called Andouillette.

We cook greens in Turkey necks and butt over here :mjgrin:

But I'll say it again..weak mac and cheese will fukk up the whole dinner :mjpls:

Can't go cheap on the cheese either :mjpls:..

Also if its a roux based or a less wet mac n cheese :jbhmm:

I be wanting to try some smokes gouda or even gruyere:patrice: my mom never made a mozarella one.
