You can't beat the QB up like that lol. To prevent all of that they will just "give themselves up" when they don't have the ball.

Gap control and tackling. Hit the RB and QB hard to discourage any type of foolery after you handle the assignment.

When you hit the qb enough it will take its toll. Just ask Vick. RGIII broke down taking hits. it all catches up with you in the end. Most mobile QB's get hurt including someone like Big Ben. The read option just allows more hits at the qb and if they get hit enough as I said, it will affect how they use it. You can't run it every down. Attack the qb.
