chicken thighs are amongst the cheapest protein you can buy. mice or any other non traditional protein would not only be too much trouble to prep but you would lose your business if you got busted. they use different tenderizing methods thats why the chicken looks that way

I actually looked WHY The chicken in Chinese food looks so different than what we make…

they do something called “velvetting” to the chicken by soaking the meat in corn starch, which gives it a “velvety” feel… they cook it and it turns into the ish that we get..

That’s where the cat/rat meat talk comes in cuz it looks so different
