Every version of this song on streaming has curse words on it censored
even on the "explicit" version of the album

Some artists won't clear the sample if the song that is sampling them has curses in it. Not sure that's the case here, but I've heard of it. If the song is done already they just edit the curses out.

And why on newer versions of slim shady LP /my name is the lyrics about em's teacher being a dude wanting to fukk was changed to the video/single version cause the artist is a gay guy

Because Loud Records was Shook.
Sort of a lost story, but in the retail era, record companies had to make concessions to be carried in record stores.
The Wutang debut album almost flopped because Loud at first refused to ship a clean(er)version out to Wal-Mart and other retailers. They eventually did, and Wu went on to sell what they did.

I think they might have kept doing that with album releases for a few years.

It is censored but I don’t think there are any curses in the song. The only word that is blanked out is when he says “for real n1ggas who ain’t got no feelins” and a few other times when they say n1gga. Obviously you blank those for radio etc but I think they could only find the DAT for the censored version, the real one got lost or whatever.
