Say if you have been on your job for 5 yrs, but you get an offer from another job.

With so much uncertainty, I would stay at the current job. You take the new job and get laid off a couple months later, your old job is off the hook in paying you unemployment, and the new job dont have to pay you unemployment either since you only been there 2 months.

don't do it, it doesn't make sense
A dude just left my job. He been here over 3 yrs. He started the new job a few weeks ago and already had 5 machine crashes. They moved him to assembly, which is his last chance, and he cant come back to the job I'm at because he only gave a 2 day notice

Not wise. I have a job where I cannot do it remotely in government so I'm still getting paid, I have not found, amongst the other careers I considered switching into, this kind of freedom. I worked for 7 years to get to this point before where I dont work all day and now that continues to be the case.

Stay if you got it.

The only thing is I dont know when people will be hiring next for whatever it is i have modified my career switch to.
