What makes one artists catalogue better than the others?

If music is subjective to the listener, how and why are there objective standards to one artists catalogue vs the others?

It's all subjective in the end. Saying that one artist has a better catalogue than another is just an opinion.

While it's a given that it's subjective, there are elements that can be agreed to matter here, such as:

Quantity of material
Variety of themes contained in the material while maintaining a high level of quality
Variety of styles contained in the material while maintaining a high level of quality
Consistency of quality within the catalogue
