We've already had The Mandalorian, Book of Boba Fett, and (if you count animated) Bad Batch.
Obi-Wan is up next, Ahsoka is getting a spinoff at some point, and there's some other stuff (The Acolyte, Andor, Rangers of the New Republic) in pre-production. What other characters/events/time periods would make for good spinoffs? I'm thinking
Darth Plagueis: Could be somewhat based off the book. It would have Plagueis and a younger (20s or 30s) Palpatine as the main characters. You could also have appearances from younger Dooku, Yoda, maybe Maul as a kid, etc. Probably end it with Palpatine taking over as master.
Yoda: I could see a spinoff about Yoda in his wild younger days working. Maybe before he was a master. The good thing about Yoda is, he's been alive a long time and is a CGI character, so they could easily have long timeskips and tell a story over hundreds of years if they want.
Bane: Again, they could take inspiration from the book. Would cover the fall of the old Sith order and the rise of the Rule of Two, and would take place about 1000 years before the movies.
Luke Skywalker (animated): I wouldn't want them recasting Luke personally (or to have CGI Luke for an entire show), so I wouldn't want this in live action, but I wouldn't mind an animated series about Luke and what he was up to in the 30 years or so between Episode 6 and 7. Could cover how he met Ahsoka, founding the school, his relationship with Ben Solo when he was younger, maybe explain more about Snoke, etc.
