liberal arts, sociology etc. doesnt deserve to be in the same breath as econ.

i'd advise econ majors couple their major with a minor either a language or something business related though. Namely Finance, Operations or Accounting.

You know like Accountants, do accounting, taxes, audit,

IT does, systems networking help desk.
