One thing I appreciated about Texas before taking on the pescatarian lifestyle, was they piff ass bbq. Brisket is just.....gotdamn. Ribs, pulled pork, chicken, smoked turkey, the sides, etc.

Foreigners come here to the states and pig out and get thick, its beautiful.

Nothing like the cow in Kansas City. Hard to find beef ribs there tho, go to Texas for that, but the cow in KC is damn delicious.

As for as grilling technique, I like Memphis.

For sauce, Carolina Gold... I could swim in it.
