I have no idea about the chicken but shrimp cook fast...like 5 minutes fast. Your main concern should be the roux not the meat
I watched video of someone cooking the shrimp for an hour. The chicken for 2 hours. And his shyt was legit

Flip the box over and handle business, play some New Orleans music in your kitchen, make the Gumbo comes alive....

I use this........ Following the directions.....no Shrimp for me..... Chicken and Sausage....
Cook on low for 2 hrs after all meat have been added.....

Before i even add any thing, i get a ham hock a stock pot 2 - 3 cups let that bad boy boil for about 1hr or so......

Last u will need some Gumbo File, add that the last 15-20 minutes after the Gumbo is completely done.......
and stir that pot for about 10 minutes so it mix good.....

"Keep stirring the pot" - words of Grandma

This is one of those things Ive always wanted to make but it seems so daunting... there's a million ingredients and most recipes I see aren't authentic. :sadcam:

1 hour for shrimp?
:skip:

You might as well chew on some rubber bands
:heh:

But foreal tho, never add seafood till the END. Cut it off, then add and stir till it starts getting pink(or red shells for crabs), then let it sit and get that flavor in there, stir occasionally while it’s still cooling down.
