Because they've been making the same shyt for 30 years?

They not gon like this.

I think it's easier to be polished whe. Your not worrying about how many polygons your game is pushing, how long your story is, how many square miles your map is or how many p's your textures are.

Same characters, not the same games.

Ubisoft, EA, Activision or many of the other "big" companies can only dream of releasing something as polished as any of the Mario Galaxy games.

To answer this question it is because Nintendo is an extremely conservative company. They do not operate with this idea that "it can be fixed later via a patch etc". The game will not come out until they feel it lives up to their standards. If there is a bug they miss? Fine, but you rarely hear about Nintendo games having terrible bugs from the start for this very reason and for that they deserve all the respect in the world for how they handle things.

Nothing
They also aren't preoccupied with dynamic lighting, high-res textures, forced online features, voice acting etc

Which take up lots of time and resources

It's gameplay first, everything else second
You have a point. The more features a game the possibility of shyt going wrong increases
