Like why is it so hard for them to admit to shyt? Like something as simple as asking them why they are single. Every time I've heard a female being asked this question they can never give a straight answer.

It's insensitive and could be hurtful for a variety of reasons, it implies that being single is bad and that it is her fault for being there. Plus someone being single is part of the story of his or her life, there is not usually just a reason you can rattle off like "what are your strengths?" In a job interview. If she's sitting there on a date with you, odds are good that she wants to meet someone to settle down with, wants to find love, and being asked why she is still single will make her insecure and feel like shyt for not having achieved that, as if it is the ultimate barometer of her worth as a woman.
