Grandmother used to make them for family gatherings way back…mid-90s.

Never even desired to try them cause I was there during the cleaning/prep…and I just couldn’t with the smell.

Looking back I wish I would have at least tried them though…

Chitlins aren't the same as tripe, not even close. Tripe is the second stomach of a cow, they are white honeycomb looking and doesn't taste like anything. Chitlins are the lower or small intestine of a pig and smell as such. They're okay with hot sauce. I haven't had them in years cause only people of my grandparents generation made them.

to add more confusion Mexican Tripa is the same as chitlins.
