Got to it before me, but I was going to mention that cinamaldehyd has a higher concentration in actual cinnamon than in cassia which is likely what he is using. Most store bought cinnamon is actual Cassia because actual cinnamon is surprisingly expensive like on the same level as actual vanilla extract .....
