Accomplished yes, but Sidious was NBA-level with the Force while these Jedi were PAL-league dudes. They were probably shocked as they'd never expect someone that old to move like Jagger and stunt on them.

i thought those dudes were scrub status but i rea bios and dudes were accomplished, yet a 900 year old yoda held his own

Sidious was by the far the strongest character in the series. They didn't showcase it properly in the movie but he was meant to move ultra fast during his duel with mace to the point where you can only see his lightsaber moving in flashes. That's why he takes down 3 of the Jedi masters down almost immediately.
mace was gonna body him but 
dooku was more experienced the first time for sure, the 2nd fight was just a slip up really.
