I agree with this, as a former chef, i can agree that some things upscale restaurants do aren't because it is better, but more from a bougie sensibility.
It is much better both health and flavor wise to cook de-veined shrimp. People just do that because it looks more aesthetically exotic and upscale.

it wasnt the fact that the food looked terrible (it did), it was something else....it just felt disgusting
