They eat a lot of beans. Now certain people get the farts with beans and for that you just need to take digestive enzymes which run pretty cheap these days around $20 for a 2-3 month supply.
Beans provide a lot of nutrition in the form of amino acids, vitamins and minerals.
This is not unique to Mexicans, but every morning I have a banana smoothie with 2 bananas to give me potassium which is severely lacking in the American diet as well as some other trace minerals and B's. Add in some soymilk or grape juice for additional volume. I mix in my powdered herbs with it to make it very economical.
When I was broke in college I ate bananas, and ate a lot of eggs which also provide many vital nutrients. If you like tuna (I don't) then canned tuna is another great cheap source of protein and omega 3s.
Blackstrap Molasses is an incredible source of Iron, Calcium and Magnesium AND potassium. With low sugar relative to other sweeteners. Just 2 TBSP a day give you 50% of the DV for the latter 3, and about 25% of your Iron requirement I believe. Of course best of all it is cheap.
The key here is education. You've got to do your research because everyone's food tolerance and tastes are different. Get in the habit of buying NOT WHAT TASTES GOOD - But what you can tolerate that is MOST NUTRITIOUS FOR YOUR BODY.
Once you move away from the American perspective on food, focusing on taste and appearance you should be golden.
