As was stated earlier in the tread these are overcooked. It's cool a lot of people like them like this but the texture is a little off for me personally.

Besides it's not rocket science on how he does it. He just wraps them in foil or butcher paper to essentially steam them after they are "done" downside is it fukks up the bark.

He doesn’t even realize he is looking at beef, not pork. :mjlol:

But back to the topic at hand, meat just sliding right off like that is overcooked. You really only want that if you are cooking pulled pork as you will be shredding it with its juices anyway. You really should have to give it a slight pull to eat it.

If this guy is wrapping the meat to get it to that state then the bark is nonexistent and the meat will have a more mushy texture.
