whats your step by step for that chicken fried rice. Mine never come out right is owning a wok critical in it tasting right. I been doing it on a skillet .

Not to speak for ole boy but i make chicken fried rice all of the time because its cheap and my kids love it. i will give u a few tips.

This is the most important step to me: First steam your rice and put it in the fridge the night before. This firms it up so it wont be clammy in the pan

Use jasmine rice. The other shyt works, but trust me, jasmine is better for this dish

Invest in a wok. They are like 12 bucks at Ikea...

Now for the dish

I usually use left over baked or rotisserie chicken, dice that shyt up
fry your egg first w/ some pam spray
take off the egg and place it to the side
Add your oil to your wok. Use sesame oil tho.... It gives your rice that authentic taste (dont use too much because it is strong)
Get you a bag of frozen mixed veggies sautee them up with onions and bean sprouts
Add the pre cooked rice......and a dash of sugar (this simulates MSG which is sweet, trust me it works)
Add dark soy sauce, but dont go ham with it
Add chicken
Stir alot so the rice can get evenly brown and wont clump
Finally add the eggs and let them integrate with the rice for about 2 minutes.
Take it off the heat

naw. cooking rice is easier than cooking in a skillet, but I have made that dish plenty of times without a wok.

the reason yours probably don't taste right is cuz you ain't seasoning the rice proper. the hibachi joints use garlic butter and sesame oil. I don't have neither of those ingredients, cuz I can just used minced garlic with the butter and sesame seeds cooked in the oil and some in the rice itself. that's what gives it the unique flavor. also, white onions are a must IMO cuz you need that flavor.

  1. now how u go about making this is you first cook up some rice. it can be minute rice or regular rice. I made a lot, so I used 4 cups of dried rice.
  2. once that's cooked, chop up some green onions really fine and toss that in
  3. boil some baby carrots on the stove and then chop the shyt outta them til they are small
  4. dice up some chicken breasts (I used two large chicken breast) into cubes or small pieces and cook that
  5. chop up about half a large white onion into small pieces
  6. put a good tablespoon of minced garlic in that rice
  7. sprinkle sesame seeds in the rice
  8. put a healthy amount of pepper on that rice.
  9. put about 5 table spoons of soy sauce on the rice (I use kikoman brand)
  10. combine all those ingredients into the rice.
  11. take 2 tablespoons of butter and put it in ur wok and put that shyt on high or medium high heat.
  12. add one spoon of oil (I used canola oil) to the wok
  13. put some sesame seeds in the butter
also, a lot of folks add eggs to their rice, but I dont like eggs, so I omitted that part

now take ur rice mixed with all those ingredients listed above and put that shyt in the wok which should be hot. or you can use a skillet. cuz it dont matter. since everything is already cooked, you ain't really cooking it more, but getting it all hot and mixed up good. I will cook all of this in a wok or skillet and cover it up with a pot top to really get it heated. takes about 5 or 10 minutes of cooking/frying in the wok/skillet, and you're done. you can tell cuz the white onions will be caramelized. once that's done, you are good to go. if ur rice ain't tasting right while cooking it, add a more soy sauce as needed. sometimes I have to add more cuz I made too much rice.

no doubt. I dont have the sesame oil, but I have sesame seeds, which can produce the same flavor once cooked with that regular canola oil. I dont like beans sprouts or eggs, so I don't use them in my rice. I haven't tried the sugar tho.

I always make my rice at the same time tho.

I haven't tried using jasmine rice for this, but I did use it for those chipotle bowls. I will probably use it next time. I just don't want the jasmine flavor taking over the dish.
