If she loved overcooked she'll like lovers in a dangerous space time. (I think overcooked is way better though)
The binding of isaac has a co-op mode but if you're familiar with the game you'll know it might be too difficult or uninteresting for her.
Diablo 3 gets a lot of burn at my house but I get that it's not for everyone.
Borderlands the handsome collection is probably one of the best co-op games you can get.
Guns gore canoli is fun.
Rayman legends is great.
Tomb Raider the temple of Osiris is straight but depending on why she didn't like Diablo 3 she might now like this one either.
Resident Evil 5 and 6 is split screen co-op and I had a lot of fun with those.
Have you played Resogun with her? That one is fun with 2 players.
Knack is straight too, but I wouldn't really consider it full co-op. More like player 2 is a companion/helper role to player one.
If local co-op is important to you it sounds like you might need to pick up a Switch.

Can't wait for the guns gore and canoli sequel.
