This was a job I got laid off when the COVID pandemic happened.
I worked at other restaurant jobs that pays less that 18/hr, but I pulled in more hours and got paid more bi-weekly. All the new jobs treated me with respect because they saw how much of a good worker I was. I'm happy but still angry at the same time because I still got bamboozled to c00ns and The Man.

Yeah having CYA(cover your ass) email and correspondence is always invaluable.

I kept all my work projects in separate folders so if anyone tried to say I was supposed to have done or said something I could quickly check the email threads that said otherwise.

A few times incompetents tried to push their own fukkery onto my department but we had receipts ready to go.
