Well. I guess that's my point. I never really subscribed to the whole "soul\slave" food narrative to begin with. What guys are attempting to describe in here has everything to do with an income issue. Fried chicken isn't soul food... neither is Mac and Cheese or fried catfish, etc... Its just shyt people like to eat cause it tastes good....
I do think that there is a certain group of food or foods that make up soul food, but I see that people just think it's collard greens, mac&cheese, and mashed potatoes. I also think soul food may vary by region and the black population available. I could be wrong that's why I asked. You make a valid point too. I did think that soul food may be this (pictures below), but I am not African American so I didn't want to say the wrong thing as definite.

look at its ingredients
Like seriously, its 6 post up my dude.

I don't know if I should be offended that people are calling Mac and Cheese soul food.
It all depends on how you cook it. And when you take into account the fact that those commenting are not even of black American slave descent, you can't expect them to know that shyt.
Salt pork in mac and cheese? Im from the deep South and i ain't never heard of such. I don't blame you for feeling so strongly, you were traumatized.
and maybe oxtails which are boiled there isn't anything else cooked in fat.
