I know in Kansas city the first popping bbq joint was a spit where they served even roadkill as bbq and served the bbq wrapped in newspaper. A black man put em on the map

I doubt Indians was cooking anything like black folks did. Most of the BBQ hotspots are mostly black areas. Memphis, Kansas City, St. Louis etc etc.
