Dinner ideas for people who work late

Chicken and seafood are my fav foods for quick meals. I spend my free nights (mondays) forman grilling or baking a whole heap of chicken with a basic seasoning.

Throughout the week I can throw some of it into a salad (feta, spinach, kale, walnuts, cucumbers, tomatoes, cranberries, grapes), match it with pasta (spinach, cheese, tomatoes) or have it with some rice and even a low sodium soup poured over for all the veggies, sauce. Seafood like salmon and shrimp cooks up fast so is good too. Tuna salad in a pinch.

Maybe its just me, but I need variety. Healthy meals for the most part don't take a lot of time at all. I started cooking tonight at 8:47 and at 9:16 I was :blessed: no BS. I don't make crap meals either I've posted some on here :youngsabo:

Do you like Tuna salad? I have a crack recipe that my mom used to make since I was a kid. We used to eat delicious tuna melts and tuna salad with a side of strawberries and triscuts or if you are trying to treat yourself, lays potato chips with sweet potato French fries or kale chips as a healthier option...

Also you need to look into what I call "bowl dishes"

2 veggies(broccoli and spinach/kale are my favorite), brow rice/quinoa/sweet potato... Onions, garlic, peppers,

And pick a protein to add and your favorite spices and :blessed:

Buy a nice cute of beef cut it into squares and split it up evenly... Or chicken thighs, or even fukk around with seafood if you are chef.

But the bowls are great things to take with you...

If you're not big on leftovers, at least have your meats, veggies, etc. seasoned and ready in the fridge. My meals never take more than a half-hour to make start to finish.

Depending on your schedule, it can not only be convenient, but tasty

I cook like 4 times a week and try to limit it to as short of a time as possible.

Steak is super quick and delicious. Buy a nice cut with good quality. Salt, pepper, high heat 2-3 mins on 1 side, flip over, add butter, another 2-3 mins. Let it rest. That';s like 10 mins. While steak is cooking, make mashed potatoes, about another 10 mins extra. Make creamed spinach. Make a roux, add salt pepper nutmeg and frozen spinach, thats another 5 mins. The secret is knowing what takes the most time, doing that first, and doing everything else while it is cooking.

I have a freezer full of fresh pasta and you can use any sauce you want, literally like 15 mins at most for a good sauce and pasta. I like using a cream sauce, just use cream, butter, shallot, bit of white wine, chicken stock, and nice romano cheese. Another easy sauce is literally tomatoes from a can, pancetta/bacon, cheese. Also got frozen ravioli, buy fresh sage, add butter onion sage, easy.

I have a freezer full of chicken thighs. I defrost it under water for like half an hour, still partially frozen but easy to handle. All I do is add seasoning, pan sear so its nice n golden brown, inside still frozen, add a bit of chicken stock and wine and transfer it to a oven to cook through. Eat it with rice.

Canned salmon, the good alaskan kind. Mix it with panko, parsley, lemon zest, salt pepper, scallions, etc, make a salmon burger with pre washed salad.

Don't pre chop and prepare everything before you cook, prepare what takes the longest first, then prepare along the way as things are cooking, save so much time.

To get the best flavor without seasoning thing for a night or a few hours, you have to add in a layer of flavor by searing it, don't be afraid of high heat.

You can chuck anything you want into it with some noodles and call it a day. You would have enough broth to fill the gap and it would be relatively healthy.

Shredded chicken
Carrots etc

You can have the ingredients laying around for ease
