Django Unchained was inspired by a 1970s movie. There was a white guy in the film who played the original Django back in the 70s. Wasn't ripped off from Catcher Freeman. :why:

I think Kill Bill was inspired by Cowboy Bebop a lot
Kill Bill was heavily inspired by Lady Snowblood

The plots are just about the same and Oren Ishii is a copy pasted rendition of Snowblood

Never seen Lady Snowblood, I'll check it out sometime.

Cowboy Bebop deals with a syndicate of assassin's who utilize lots of martial arts and gunplay, the villain Vicious reminds me of Bill somewhat and the visual imagery is comparable at times.

I'd say the eclectic music choices are similar to a degree. I wouldn't call it plagiarism though.
