The ethnicity is all subjective cos there were stories of other “saviours” with the same story of Jesus that predates Jesus. And you can give whatever race you deem right to your “saviour”.
The early Catholics (and later Protestants) worshipped images of black Mary & Jesus until they decided to start using images that look like them. The Orthodox Church for the most part still use images of black Mary & Jesus.
