I've played Fallout 3, New Vegas, and Skyrim. I found Skyrim to be boring as hell. I've always hated fantasy though. Fallout 3 and New Vegas are pretty similar, but I'd put New Vegas on top since I liked the story, characters, setting and sidequests much more. New Vegas also had more technical issues though. If you're willing to look past that then the game is super enjoyable. Easily one of my favorite games of the last generation.
Skyrim has the best environment but the gameplay is average on the console (great with pc mods). The story is very disappointing because its not engaging, their is little role play opportunities, and some things in the game don't make sense. For example if you choose to be a Khajiit how can you be able to enter any city but the rest of the Khajiits have to stay outside of any city? Also the quests for most of the guilds could have a been better. If you do the Companions quest you can become the leader of the group in less than a month in in-game time. Also if I am the leader of the Companions why do I still have to do errands for the other members of the guild? Things like that almost kills the experience for the game and that is why I can't put the game above Fallout 3 and New Vegas.
