Its simply racist iconography. The fact that white people are by far the biggest consumers of watermelon isnt relevant to its racist intent. Linking black folks with 'melon is a symbol from the days of slavery, where black folks were portrayed as simple minded and ignorant, and gladly accepting of watermelon as compensation for enslavement in lieu of monetary payment or freedom. Its obviously been a stereotype and smear that has survived generations.
