I’m not into runny eggs that much BUT

1) Eggslut in Downtown LA is next level (one in Vegas too now) and their eggs tend to be a little more on the runny side

2) to adjust Gordon’s recipe so the egg aren’t too too runny just wait a little long to add the creme fraiche. That way you’ve given the eggs a little more time to firm up and you can be sure that it’s cream and not runny eggs that are giving it that texture.
